HUNTINGTON STATION, NY – April 18, 2026
We had never been here before. Nautilus Roasting Co. opened about a year ago at 1000 New York Avenue, Unit A, Huntington Station, and like so many places in our own town, it somehow stayed just outside our routine – until now.
We’re always looking for an excuse to try somewhere new, so when we needed a place to meet with Gary Lupinacci to learn more about Mountainside Treatment Center, I chose Nautilus.
From the outside, it’s simple. Welcoming, but understated. But once you step through the door, the originality of Nautilus begins to unfold with each step across the tiles.
Coffee, cappuccino, teas, and treats line the menu – but the coffee itself stands out: dark, richly nuanced, and incredibly smooth. They roast their beans weekly in small batches. You’ll find everything from their Signature Blend to single origins like Sumatra, Guatemala, and Ethiopia, and you can customize your coffee with a large range of syrups or just drink it as is.
The food menu is entirely vegan, with options that range from delicate to decadent to more adventurous choices, along with several gluten-free offerings.
At the counter, a strip of hunter green peeks through the doorway as you wait for your order. “Take a seat,” the barista waves toward a zigzag hallway that pulls you in.

The space opens up into something that feels lifted straight out of Alice in Wonderland – unexpected, whimsical, and completely its own. Every chair is different. Tall, short, ornate, simple, cushioned, carved. Each table shifts in size and texture – velvet, wood, glass, linen.
Sun-drenched or shadowed, cozy or a little offbeat – there’s a spot for every mood. Decorative details are tucked everywhere you look, from vintage pieces to playful artwork.
A quiet tea for one – check. A long conversation – check. A place to sit and just think – also check.
Nautilus hosts a steady mix of events – art workshops, gallery nights, open mic evenings, and fundraisers. Follow them on Instagram for menu specials and upcoming events.
The shop is owned by Hugo Fitz, co-owner of The Perks Dept and the person behind the Huntington Flea Vintage Market that brought new life to the Huntington LIRR commuter lot on Sundays last summer and fall.
We loved Nautilus so much, we came back the very next day for another meeting.
If you need a break – to get out of your own head, shift your perspective, or find a little spark of inspiration – Nautilus Roasting Co. is worth the stop.
